A Wayanad sadhya is a traditional vegetarian feast from Kerala, similar to other regional Sadhyas, featuring a wide variety of dishes served on a plantain leaf. It includes rice, various curries, pickles, and side dishes like avial and thoran, followed by desserts such as payasam. The "Wayanad" part refers to the specific cultural and culinary context of the Wayanad region in Kerala, though the sadhya itself follows the general Kerala Sadya format. 

Components of a Wayanad sadhya

  • Main course: A portion of boiled rice, usually served pinkish.
  • Side dishes: A variety of vegetable preparations such as avial (mixed vegetables in a coconut and yogurt gravy) and thoran (finely chopped vegetables with grated coconut).
  • Curries: Different kinds of curries, like sambar (a lentil-based vegetable stew) and rasam (a tangy and spicy lentil broth).
  • Savouries: Items like pappadams (crispy lentil crackers) and various pickles.
  • Desserts: Sweet dishes, primarily payasam, which is a pudding made from milk, jaggery, and rice or vermicelli, and can be flavored with coconut milk and spices.
  • Other items: The meal may also include kichadi (a type of raita) and sour buttermilk (moru). 

How it's served

  • The sadhya is served on a large plantain leaf, with specific items placed in a particular order to ensure the right balance of flavors and textures.
  • The meal is often served during celebrations like Onam, weddings, and other festivals.
  • The meal concludes with a sweet payasam, often followed by rice and rasam or rice mixed with buttermilk to cleanse the palate.
